​Sausage casserole x 2

Ingredients

  • Sausages:

    •  sausages 

  • Vegetables:

    • large onion, chopped

    • cloves garlic, minced

    • carrots, sliced

    •  celery stalks, chopped

    • red bell pepper, chopped

    • diced tomatoes

  • Liquids:

    • chicken or vegetable broth

    • Worcestershire sauce

  • Herbs and Spices:

    • dried oregano

    •  dried thyme

    • Salt and pepper to taste

  • Extras:

    •  cooked beans (cannellini or kidney beans work well)

    • Fresh parsley, chopped (for garnish

Chilli x 2

Ingredients

  • Meat:

    •  ground beef ( or use plant-based meat)

  • Vegetables:

    • onion, chopped

    • cloves garlic, minced

    • bell pepper (red or green), chopped

    •  diced tomatoes

    • kidney beans, drained and rinsed

    •  black beans, drained and rinsed

    •  tomato paste

  • Spices:

    •  chili powder

    •  cumin

    •  paprika

    •  cayenne pepper 

    • Salt and pepper to taste

  • Liquids:

    •  beef or vegetable broth

    •  olive oil

  Chicken Parmesan  x 2

 Garlic and Honey glazed Chicken with Roast potato and Veg  x 2

  •  medium boneless skinless chicken breasts

  • HONEY GARLIC GLAZE

  •   olive oil

  •   honey

  •  brown sugar

  •   Dijon mustard

  • minced garlic

  •  dried oregano

  •  dried basil

  •  EACH salt and pepper

  • VEGETABLES

  •  medium red potatoes, cubed

  •  olive oil

  • salt and pepper, to taste

  •  asparagus, rinsed and ends cut off

  •  chopped fresh parsley,

Spaghetti Bolognese  x 2

For the bolognese sauce

  •  tins plum tomatoes

  • small pack basil

    leaves picked, ¾ finely chopped and the rest left whole for garnish

  •  dried oregano

  •  fresh bay leaves

  •  tomato purée

  • 1 beef stock

  •  red chilli

    deseeded and finely chopped (optional)

  •  red wine

  •  cherry tomatoes

    sliced in half

  •  parmesan

    grated, plus extra to serve

  •  spaghetti
